What is the difference between Natural and Dutch Processed cocoa powder?
Natural cocoa powder is the natural powder that results from pressing roasted cacao beans. Some of the cacao butter (fat) remains, as do the natural flavours from the cacao beans. It reacts with baking soda, which can naturally help your baked goods rise.
‘Dutched’ cocoa powder is the process of washing cacao in an alkaline solution to neutralize any acidity making it non-reactive to baking powder or soda, and neutral in flavour. 'Dutched' cocoa powder is generally darker in colour.
Natural cocoa powder can be substituted for Dutch Process in a pinch, but always check your recipe’s instructions.
